FEJOADA (Black Beans and Rice)

2 c black beans
1-2 onions chopped
2-4 garlic cloves minced
1 lb. meat chopped into bite size pieces
bay leaves

Soak beans in 2 quarts water overnight. Drain and rinse. Cover with 2 quarts fresh water and cook till beans are tender. In another pan saute onions in 2 Tbsp oil until translucent. Add meat and brown. Add cooked beans, garlic and bay leaves. Simmer for 1 hour. Add salt to taste.

2 c rice
2 Tbsp oil
1 onion chopped
2 garlic cloves minced
2 bay leaves
4 c water

Heat oil in pan on med-high heat. Add onions and saute for 2-3 min. Add rice and let brown. Stir consistently to get even browning on the rice without burning it. Once rice is browned add garlic, bay leaves and water. Stir, cover, reduce heat to low, and set timer for 20 minutes.

Serve fejoada over rice.

  2. We enjoyed this, very different from our normal menu-but that is a good thing. Thanks Tani. We had ours with flour tortilla's as a burrito.

  3. It was good :) My kids didn't care for it but then I added some sauted yellow squash and mangos with it and then they ate it :) Thanks Tani
