Alfredo Chicken Lasagna

Italian Chicken Roll-ups

6 boneless skinless chicken breast halfs
6 thin slices deli ham
3 slices provolone cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk
cooking spray

Flatten chicken to 1/4- in. thickness. Place a slice of ham and half slice of cheese on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick.

In a shallow bowl, combine crumbs, Parmesan cheese and parsley. Pour milk into anothe bowl. Dip chicken rolls in milk, then roll in crumb mixture.

Completely thaw in the refrigerator. Spritz with cooking spray. Bake, uncovered at 425 for 30 minutes or until the juices run clear.

Meatloaf

2 lbs. Hamberger
1 pkg. onion soup mix
BBQ Sauce (I used Homemade)
Saltine Crackers

Mix and shape into loaf. Bake 350 for 45 min. Pour off any grease before serving.

Tuna Casserole

1/2 Bag Egg Noodles
1 Can Tuna
1 Can cream of Mushroom
1 Cup sour cream
1 Can peas
Shredded Cheese
Mix and place in 9 x 13 pan. Add bread crumbs on top then top with more cheese.
Bake 350 for 30 min.

Coconut Chicken

3 Chicken Breasts cut into strips
1 Cup Coconut
15 Vanilla Wafers
Egg
1/2 Cube Butter


Crush Vanilla wafers in a ziploc bag, add coconut. Stir Egg just a little bit. Dip Chicken in Egg then put in bag and cover with coconut and cookies. Place in a shallow baking dish. Finish rest of chicken and Drizzle with Melted Butter. Bake 375 for 15-20 min.
