Pork Chops

8 boneless pork lion chops (3/4 in thick)
2 Tbls canola oil
1/2 cup packed brown sugar
1/2 cup chopped sweet onion
1/2 cup each ketchup, barbecue sauce, french salad dressing and honey.

In a large skillet, brown pork chops in oil in batches on both sides. Return all to the skillet. Combine the remaining ingredients; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or until meat is tender.

Put in a freezer container, Thaw in refregerator overnight. Place in a skillet; bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until heated through.

Baked Ziti

1 - 16 oz box of Ziti (cooked al dente')
1/2 lb. sausage
1/2 lb. hamburger
1/2 onion
1 jar of you favorite spaghetti sauce
Mozzarella Cheese


Cook pasta, sausage and hamburger, add onion. Mix altogether with spaghetti sauce
put in 9 x 13 pan cover with cheese and bake, uncovered, at 350 for about 30 to 40 minutes.

I serve it with breadsticks, or french bread and a salad.

Nice & Easy Italian Chicken

6 boneless chicken breast (about 1 1/2 lbs)
8 oz mushrooms, sliced
1 med green bell pepper, chopped
1 med zucchini, diced
1 med onion, chopped
1 jar (26 oz) pasta sauce
1 can Italian diced tomatoes (14.5 oz)
4 oz of tomatoe sauce
1/4 tsp of Italian seasoning
Hot cooked linguini or spaghetti

Combine all ingredients, in crock pot. Cover; cook on Low 6-8 hours or until chicken is tender. Serve over linguini

FEJOADA (Black Beans and Rice)

2 c black beans
1-2 onions chopped
2-4 garlic cloves minced
1 lb. meat chopped into bite size pieces
bay leaves

Soak beans in 2 quarts water overnight. Drain and rinse. Cover with 2 quarts fresh water and cook till beans are tender. In another pan saute onions in 2 Tbsp oil until translucent. Add meat and brown. Add cooked beans, garlic and bay leaves. Simmer for 1 hour. Add salt to taste.

2 c rice
2 Tbsp oil
1 onion chopped
2 garlic cloves minced
2 bay leaves
4 c water

Heat oil in pan on med-high heat. Add onions and saute for 2-3 min. Add rice and let brown. Stir consistently to get even browning on the rice without burning it. Once rice is browned add garlic, bay leaves and water. Stir, cover, reduce heat to low, and set timer for 20 minutes.

Serve fejoada over rice.

Bake Potato Bar

Bake Potato Bar

(this recipe is enough for 2 families)

Chili:
1 lb Hamburger
1 Can Kidney Beans
1 Pkg Chili Seasoning
1/2 C Water
1 can tomato sauce

brown hamburger, add all other ingredients simmer 15 min.

If freezing mix everything together and pour into bags, freeze

To Assemble Bake Potato:

Heat Chili
Bake Potatoes 375 1 Hr. (we like to rub ours with olive oil and garlic salt then wrap in tinfoil)
Top potatoes with Chili, Cheese, Sour Cream, and any other toppings you wish :)

Tortillas
Chicken, cooked and chopped
Cream of Chicken Soup
Sour Cream
Green Onions
Green Chilies
Chili Powder
Paprika
Black pepper

Mix soup and sour cream. Mix all the rest and add 1/3 of soup mixture. Add about 1/3 cup chicken mixture to each tortilla and roll up. Place seam side down in casserole dish, then spread soup mixture over top and bake 350 for 35-45 min.
